Ingredients (Serving 4 or 6)
3 cups fresh Kale, center rib removed, rolled, sliced
1 cup diced mango
1 cup diced fresh strawberries
1 cup diced red, yellow or orange bell pepper
1 jalapeno, seeded and diced
6 green onion, thinly sliced
¼ cup chopped cilantro
1 can (15 ounces) black beans, rinsed and drained
¼ cup lime juice
1 table spoon olive or vegetable oil
