Summer Slow Cooker Fruit Cobbler

Ingredients (serve 6)
½ cup whole wheat flour
¾ tsp baking powder
Pinch of salt
¾ cup raw old fashioned oats
½ to ¾ cup packed brown sugar (adjust to taste, varies by tartness of chosen fruits)
½ cup granulated sugar
¾ teaspoon ground cinnamon
2 Tbsp vegetable or olive oil
5-6 cups fresh summer fruit*
Juice and zest of a lemon
½ cup chopped nuts (optional)

*Use one type of fruit or a combination of peeled and sliced stone fruits and berries

Preparation
1.Grease the inside of a 3 or 4-quart slow cooker.
2.In a Mixing bowl, whisk together flour, baking powder, salt, oats, and sugars. Add oil and mix well with a fork or fingers so that it is evenly distributed throughout the flour mixture. Stir in fruit, lemon juice and zest (and nuts if using) and combine gently.
3.Spoon the mixture into the slow cooker. Cover and cook on low for 3 hours. Serve warm topped with vanilla ice cream, whipped cream or coconut cream!
