Ingredients (serve 4)
4 cups shredded raw veggies
½ medium onion (shred with the other veggies)
2-3 green onions, chopped fresh herbs
1 large handful chopped fresh herbs
1 tsp seasoning of your choice (ground cumin, coriander, garam masala, turmeric, Italian seasoning, smoked paprika, etc.)
½ cup whole wheat flour
½ tsp baking powder
½ tsp salt
2 eggs
Vegetable oil for frying
Preparation
1.Preheat oven to 300 degrees. Using the large holes on a grater or food processor, shred the veggies and onion and place in a large bowl. Add green onion, herds, and seasoning. Stir together flour, baking powder and salt and sprinkle over vegetables. Mix well. Beat eggs in a small bowl and add to the veggie mix, stirring until combined. (If mixture seems too moist, add additional flour).
2.Heat a large frying pan (cast iron or non- stick works best) on medium high, add vegetable oil to lightly cover bottom of pan. Use your hands or spoon to form loose patties (about 1/3 cup for each patty) and place carefully in pan. Fry until golden brown, 2-3 minutes on each side, pressing down with a spatula after flipping. Move cooked patties to a platter and keep warm in oven while you cook the remaining patties. Garnish as desired and serve!
