Prep time: 15 minutes
Makes: 4 servings (1 Cup)
Ingredients:
1/2 lb. whole grain spaghetti, dry
2 C. broccoli pieces
1 C. carrots (grated or peeled)
1 C. garbanzo beans
2 Tbsp. dill
3 Tbsp. olive oil
Pinch of salt and pepper
Parmesan cheese (optional)
Directions:

Wash vegetables

Fill ⅓ pot with water, add salt, bring water to a boil

Break spaghetti in half, add to boiling water

Allow spaghetti to cook for 8-10 minutes, strain, rinse with cold water, and add to medium bowl

Chop broccoli into bite-size pieces, add to medium bowl

Grate or peel carrots, add to medium bowl

Open can of beans, drain, rinse and add to medium bowl

Finely chop dill, add to medium bowl

Drizzle olive oil and sprinkle salt and pepper over ingredients in medium bowl

Mix together ingredients in medium bowl

Cover and place in refrigerator for at least 30 minutes to cool and enjoy!
