Prep time: 15 minutes
Makes: 4 servings (1 Cup)
Ingredients:
1 15 oz. can of black beans
1 15 oz. can of corn
2-3 green onions
1 bell pepper (if possible, use red or orange peppers)
1 small bunch of cilantro (2-3 Tbsp.)
½ chopped jalapeno (optional)
Directions:

Wash vegetables and herbs

Dice bell pepper and (optional) jalapeno, add to bowl

Finely chop cilantro and green onion, add to bowl

Open cans of corn and beans, drain and rinse with water, add to bowl

Mix all ingredients together and enjoy!
Note:
This recipe can be eaten as a side salad, a sandwich topping, or served with whole grain tortilla chips.
